In an effort to get my kids to eat more veggies, fruit they inhale, I started trying new things out of a cookbook called "Deceptively Delicious". Some of the suggestions I already do, pumpkin pancakes and muffins, but other than that my brain couldn't think of any other combos.
The main idea behind the book is that you can still give your kids what they want, like mac&cheese, but sneak in some healthy stuff along the way, like butternut squash. So I made my purees, the book tells you what veggies to use, and they wait for me in my freezer until I need them.
Today I made the kids mac&cheese but used canned pumpkin, which is a quick fix if you don'thave any frozen. You don't use much pumpkin, maybe 1/4 cup, and they had no idea. Kiera said the cheese tasted funny and I told her it was because I used grated cheddar cheese instead of the powder junk in the box. She loves cheddar cheese and proceeded to inhale her lunch. Jamie had no complaints either, and he is the hardest to get to eat at times. Andrew will eat anything, so I really don't have to sneak things on him, but still he didn't mind. Some of the things she makes in the cookbook are not ones my kids would care for, and neither do I, but most of the ideas are pretty good. I tried the rice balls, Pat loved them, but the kids could have cared less for them. They were sort of bland, so maybe next time I would use some spices to jazz them up a bit. I have made pink pancakes, you put beet puree in the batter, and the kids couldn't eat them fast enough. Jamie even said they were better than regular ones!
I have yet to try the avacado or spinach puree in chocolate cake, but I guess it would taste ok...it is just a weird thought of putting avacado in the cake mix. So if you have picky eaters, which who doesn't these days, you should try this cookbook. I had to hold back my smile at the lunch table today knowing I had tricked my kids into eating their veggies.
